White Chocolate Macadamia Nut Lava Cake
This cake takes everything I love about a white chocolate macadamia nut cookie and turns it into a tall vanilla lava cake.
The soft oil-based layers are topped with chopped macadamias before baking, then stacked with chunks of cookie dough and a white chocolate-vanilla lava that stays soft enough to move through every slice.
Let the lava cool fully, then loosen it gradually right before assembly so it stays inside a complete buttercream dam without losing that molten finish.

The Cookie I Shared With My Mom
I did not like chocolate as a kid, and I especially could not understand anyone choosing chocolate ice cream. White chocolate macadamia nut cookies were different. They were my mom's favorite, and because I wanted to be like her, they became one of mine too.
Every time I see one, I think about sharing a cookie with her at the mall in Mequon, Wisconsin. That memory is the heart of this cake.
The buttery macadamia nuts taste beautiful in the soft, oil-based vanilla layers, with little bits of white chocolate tucked throughout. Add chunks of cookie dough and vanilla lava between each layer, and the cake tastes completely new while still feeling so nostalgic.

If This Happens
The lava became very thick as it cooled
That is expected. Add room-temperature milk gradually right before assembly, stopping when the lava is creamy and molten but still controlled.
The lava looks greasy or separated
Whisk it until smooth before adding more milk. Add the milk a little at a time so the butter and white chocolate stay emulsified.
The cake layers are sitting unevenly
Use small cookie-dough pieces and keep them in one even layer. Leave room near the buttercream dam so the next cake layer has a level border to rest on.
The filling is escaping the cake
Make sure the lava is completely cool, pipe a closed buttercream dam, and stop filling below the top of that border.

- 20-30 g white chocolate mini chips
White Chocolate Lava
- 70 g butter
- 80 g granulated sugar
- 40 g all-purpose flour

Instructions
- 1Make the vanilla macadamia cake layers. Preheat oven to 350°F. Grease and line three 8-inch pans with parchment rounds.
- 2In a large bowl, whisk together the cake flour, baking powder, baking soda, and salt.
- 3In a separate bowl, whisk together the sugar, oil, milk, apple cider vinegar, yogurt, and vanilla until smooth.
- 4Add the dry ingredients to the wet ingredients and whisk just until smooth.
- 5Divide the batter evenly among the prepared pans. Sprinkle the chopped macadamias evenly over the surface of each pan.
- 6Bake for 20-23 minutes, until the centers spring back and a toothpick comes out with a few moist crumbs.
- 7Cool in the pans for 10-15 minutes, then turn out the layers, wrap them while slightly warm, and refrigerate until chilled.
- 8Make the white chocolate macadamia cookie dough. Beat the butter and sugar until creamy and cohesive.
- 9Mix in the flour, vanilla bean paste, and salt until fully combined.
- 10Fold in the chopped macadamias and white chocolate mini chips.
- 11Chill for 10-15 minutes, until scoopable, then portion into small chunks for layering.
- 12Make the white chocolate lava. Melt the butter gently until just melted.
- 13Whisk in the sugar until glossy and fully combined, then whisk in the flour, vanilla bean paste, and salt until smooth.
- 14Add the cream and 30 g milk and whisk until completely smooth.
- 15Stir in the white chocolate chips and continue stirring gently until fully melted and smooth, then remove from the heat immediately.
- 16Let the lava cool completely. It will thicken significantly as it cools.
- 17Right before assembly, loosen the lava with 30-60 g room-temperature milk, adding it gradually until the desired molten consistency is reached.
- 18Make the vanilla buttercream. Beat the butter until pale and creamy.
- 19Add the powdered sugar gradually and beat until smooth, then add the vanilla and salt.
- 20With the mixer on low, slowly stream in the room-temperature cream until the buttercream is soft, smooth, and spreadable.
- 21Assemble the cake. Level the chilled cake layers if needed, then place the first layer on a cake board or serving plate.
- 22Spread a thin layer of buttercream over the cake and pipe a complete buttercream dam around the edge.
- 23Scatter cookie dough chunks evenly inside the dam, leaving a small border near the edge, then spoon and spread a generous layer of lava over the cookie dough.
- 24Add the second cake layer and repeat the buttercream, dam, cookie dough, and lava.
- 25Add the final cake layer and frost the outside with the remaining vanilla buttercream.
- 26Garnish with remaining lava and a light sprinkle of chopped macadamias or shaved white chocolate, if desired.
