Ingredients
Vanilla Macadamia Cake Layers
- 300 g (2 1/2 cups) cake flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon fine sea salt
- 300 g (1 1/2 cups) granulated sugar
- 150 g (2/3 cup) neutral oil
- 240 g (1 cup) milk
- 20 g (1 tablespoon + 1 teaspoon) apple cider vinegar
- 120 g (1/2 cup) plain unsweetened yogurt
- 2 teaspoons vanilla bean paste
- 45-60 g (3/8 cup to 1/2 cup) finely chopped macadamia nuts, for topping
White Chocolate Macadamia Cookie Dough
- 70 g (1/3 cup) butter
- 80 g (3/8 cup) granulated sugar
- 65 g (1/2 cup) all-purpose flour
- 2 teaspoons vanilla bean paste
- 3/4 teaspoon fine sea salt
- 50-58 g (1/2 cup to 1/2 cup) finely chopped macadamia nuts
- 20-30 g (1 tablespoon + 2 1/2 teaspoons to 2 tablespoons + 2 1/4 teaspoons) white chocolate mini chips
White Chocolate Lava
- 70 g (1/3 cup) butter
- 80 g (3/8 cup) granulated sugar
- 40 g (1/3 cup) all-purpose flour
- 2 teaspoons vanilla bean paste
- 1/4 teaspoon fine sea salt
- 60 g (1/4 cup) cream
- 30 g (2 tablespoons + 1/4 teaspoon) milk
- 15-20 g (1 tablespoon + 1 teaspoons to 1 tablespoon + 2 1/2 teaspoons) white chocolate mini chips
- Approximately 30-60 g additional milk, room temperature, for loosening before assembly
Vanilla Buttercream
- 330 g (1 1/2 cups) butter
- 300-380 g (2 3/8 cups to 3 cups) powdered sugar
- 1 teaspoon vanilla bean paste
- 1/4 teaspoon fine sea salt
- 60-90 g (1/4 cup to 3/8 cup) cream, room temperature
Instructions
- Make the vanilla macadamia cake layers. Preheat oven to 350°F. Grease and line three 8-inch pans with parchment rounds.
- In a large bowl, whisk together the cake flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the sugar, oil, milk, apple cider vinegar, yogurt, and vanilla until smooth.
- Add the dry ingredients to the wet ingredients and whisk just until smooth.
- Divide the batter evenly among the prepared pans. Sprinkle the chopped macadamias evenly over the surface of each pan.
- Bake for 20-23 minutes, until the centers spring back and a toothpick comes out with a few moist crumbs.
- Cool in the pans for 10-15 minutes, then turn out the layers, wrap them while slightly warm, and refrigerate until chilled.
- Make the white chocolate macadamia cookie dough. Beat the butter and sugar until creamy and cohesive.
- Mix in the flour, vanilla bean paste, and salt until fully combined.
- Fold in the chopped macadamias and white chocolate mini chips.
- Chill for 10-15 minutes, until scoopable, then portion into small chunks for layering.
- Make the white chocolate lava. Melt the butter gently until just melted.
- Whisk in the sugar until glossy and fully combined, then whisk in the flour, vanilla bean paste, and salt until smooth.
- Add the cream and 30 g milk and whisk until completely smooth.
- Stir in the white chocolate chips and continue stirring gently until fully melted and smooth, then remove from the heat immediately.
- Let the lava cool completely. It will thicken significantly as it cools.
- Right before assembly, loosen the lava with 30-60 g room-temperature milk, adding it gradually until the desired molten consistency is reached.
- Make the vanilla buttercream. Beat the butter until pale and creamy.
- Add the powdered sugar gradually and beat until smooth, then add the vanilla and salt.
- With the mixer on low, slowly stream in the room-temperature cream until the buttercream is soft, smooth, and spreadable.
- Assemble the cake. Level the chilled cake layers if needed, then place the first layer on a cake board or serving plate.
- Spread a thin layer of buttercream over the cake and pipe a complete buttercream dam around the edge.
- Scatter cookie dough chunks evenly inside the dam, leaving a small border near the edge, then spoon and spread a generous layer of lava over the cookie dough.
- Add the second cake layer and repeat the buttercream, dam, cookie dough, and lava.
- Add the final cake layer and frost the outside with the remaining vanilla buttercream.
- Garnish with remaining lava and a light sprinkle of chopped macadamias or shaved white chocolate, if desired.
