My Favorite Products

The ingredients I am particular about.

This is the short list of brands I reach for when the product can change the texture, flavor, structure, or stability of a recipe. I am not precious about every pantry staple, but I am particular when the ingredient does real work.

The first brand listed is my preference. The options underneath are tested choices I also like, in order, so the recipe still feels possible if your store does not carry my first choice.

Use the recipe as written first.

Once you know how it should taste and feel, swaps become easier to judge.

Yogurt

Plain unsweetened yogurt

Plain unsweetened yogurt adds moisture, acidity, and body. That combination helps batters bake up tender while still giving the crumb enough structure to slice cleanly.

  1. 01

    Forager Unsweetened Plain Yogurt

Smooth, mild, and dependable in cake batters and loaf batters.

  2. 02

    Silk Plain Unsweetened Yogurt

Another plain, mild option that behaves well in baked goods.

Sour cream

Sour cream

Sour cream adds concentrated moisture, body, and a gentle tang. In the gluten-free old-fashioned loaf, it helps create a tender crumb without making the batter too loose.

  1. 01

    Violife Sour Cream

My first choice for its rich, smooth texture and dependable body in this loaf.

  2. 02

    Forager Sour Cream

My second choice and another good option when Violife is not available.

Milk

Milk

Soy milk and Ripple tend to emulsify well and give batters, fillings, and frostings a creamier finish than many almond or coconut milks. Their higher protein helps with body, while fat and stabilizers also affect how smooth the final texture feels.

  1. 01

    Silk Original Unsweet

Creamy, neutral, and consistent in batters, fillings, and frostings.

  2. 02

    Plain unsweetened soy milk

Soy milk brings helpful protein and emulsifies well.

  3. 03

    Ripple Original

A creamy option that helps batters and frostings emulsify smoothly.

  4. 04

    Oatly Barista Edition

A richer oat option that works well when creaminess matters.

  4. 04

    Miyoko's

Rich, flavorful, and helpful in the right bake.

Cream cheese

Cream cheese

Cheesecake is where I am most particular. Other brands may work beautifully in other recipes, but these are the ones I build around.

    Philadelphia Plant-Based Cream Cheese

A dependable choice for cream cheese frostings, icings, and cake batters.

  1. 01

    Country Crock Heavy Plant Cream

Silky, creamy, and dependable in buttercream and fillings.

  2. 02

    Silk Heavy Whipping Cream Alternative

A smooth option for loosening buttercream and fillings.

Condensed milk

Sweetened condensed milk

Condensed milk changes sweetness, thickness, and set, so the brand matters more here than it does for pantry staples.

Nature's Charm Sweetened Condensed Oat Milk

Thick, glossy, and dependable when condensed milk affects set and sweetness.

  2. 02

Nature's Charm Sweetened Condensed Coconut Milk

Works well if you want a coconut note.

Marshmallows

Marshmallows and mallow

For marshmallow-heavy recipes, texture and melt matter. This is one of those ingredients where I do not treat every brand as interchangeable.

  1. 01

    Dandies

My hands-down pick for marshmallows and mallow.

Hazelnut spread

Hazelnut spread

A good hazelnut spread should taste rounded and chocolatey without making the dessert feel waxy or flat.

  1. 01

    Nocciolata Hazelnut Spread

    My favorite Nutella-style spread.

Freeze-dried powders

Freeze-dried powders

Freeze-dried powders are useful when you want concentrated fruit flavor without adding extra liquid.

  1. 01

    Jungle Powders

    My go-to for freeze-dried powders.

Food coloring

Gel food coloring

A highly concentrated gel creates vivid color without adding enough liquid to change the texture of a batter, filling, or frosting. Better color also means you can use much less.

  1. 01

    Ann Clark Gel Food Coloring

A highly concentrated option that gives strong color with only a few drops.

  2. 02

    Colour Mill Oil Blend Coloring

A concentrated, dependable option for rich, even color.

Black cocoa creates the deep Oreo-style flavor and dramatic color I want in cookies-and-cream desserts.

  2. 02
