Cake batter is easily my favorite artificial flavor. So many of my ideas begin there, and then I start thinking about which childhood favorite I can combine it with. Cake batter is perfect on its own, but cake batter and strawberry might be the best combination of all.

After my original Cake Batter Lava Cake went viral, making a gluten-free version felt like an easy decision. I had just developed a gluten-free vanilla cake I loved, and I could not wait to build this cake around it. Sometimes I take a bite and honestly wonder whether I like it even more than my regular vanilla cake.

The soft vanilla layers, cake batter lava, and fluffy cake batter buttercream make this one especially memorable. It has everything I want in a birthday cake - playful, nostalgic, and made so more people at the party can enjoy a slice.

The short rest gives the gluten-free flour and cornstarch time to absorb the liquid. A final brief whisk smooths the hydrated batter before the sprinkles are folded in.

Why the lava must chill

The filling is thin and fluid while warm, then thickens as it cools. Refrigerate it until completely chilled before assembly so it cannot soften the buttercream dam or weaken the cake's structure.

Choose the filling consistency before stacking

The chilled lava should be thick, glossy, and slowly spreadable. A thicker filling is easier to contain and is my recommendation for beginning layer-cake bakers.

Why the buttercream dam matters

A tall, continuous border contains the lava between the layers. Keep the filling below halfway up the dam so the next cake layer does not press it out.

A scale is also faster and means fewer dishes because many ingredients can be weighed directly into the bowls already used in the recipe instead of requiring a full set of measuring cups. I still use teaspoons and tablespoons for small quantities like leaveners, salt, spices, and flavorings, where they are the most practical choice.
